ABOUT THIS WINE
"RS" (short for Rosso SaĆĄa) blends 75% Merlot and 25% Pignolo from vines planted over 30 years ago on the Ponca soilsâlayers of marl and sandstone unique to Oslavia. The grapes are co-fermented using native yeasts in large oak vats after hand-harvesting and destemming. Skin maceration lasts about two weeks, with frequent punchdowns enhancing extraction and structure. The wine matures for two years in large Slavonian oak barrels and is bottled without fining or filtration, with minimal sulfur added.
This wine offers a dynamic interplay between Merlotâs supple, dark fruit and Pignoloâs grip and spice. It is approachable yet layered, making it a superb partner to dishes like braised meats, grilled sausages, mushroom ragu, and hearty pasta with tomato or meat-based sauces.
